My Ideal Breakfast Sandwich
I never was a big fan of breakfast sandwiches until last semester when I regularly saw one of my friends fastidiously construct what seemed like a work of art with scrambled eggs, sausage or bacon, and cheese on two English muffins. Once I started making similar but not as perfect breakfast sandwiches, I got hooked.
Now that I am at home, I still crave a sandwich in the morning, but I do not have access to bacon or sausage (we don’t keep these in the house). So I decided to make a sweet sandwich – peanut butter and banana with a little dark chocolate and some cinnamon.
To make this bad boy, I took two slices of whole grain bread, smeared some smooth peanut butter on both sides, put sliced banana (roughly one third of a banana), and sprinkled 10 chocolate chips on top of the banana (Just to clarify, I did not count how many chocolate chips I actually put on). I spread a little smart balance (this is a butter supplement we have in the house, but you can put butter as well) on the outer faces of my sandwich and then sprinkled the bread with cinnamon sugar. I put my sandwich in a frying pan for about 5 minutes until the chocolate chips melted and the banana got nice and soft.
Breakfast complete!
