Summertime Salad
Following my one hour trip to the gym, I wanted to eat a healthy lunch, so I decided to have some cold cucumber soup and salad with the leftover chicken from yesterday’s barbecue. I added sliced tomatoes, ribbons of carrots, and balsamic vinaigrette. Lunch took less than 10 minutes to prepare, and to reward my healthy morning, I ate a cider doughnut for dessert.
