Today was an awesome day – mainly because I spent it with my mom eating lots of good food. We went downtown and ate at an Italian restaurant called Scarpina for lunch. I was feeling adventurous, so for the first time ever, I ordered mussels to start. They came in a tomato-based sauce with lots of garlic and basil – a very tasty appetizer. For my main course, I ate chicken marsala which came with lots of mushrooms, some broccoli, and mashed potatoes. Overall, my lunch was delicious.
Later in the afternoon, after lots of walking, my mom and I had dessert at the City Bakery. My mom ordered a coffee, and we shared a chocolate chip cookie and a muffin which had cinnamon, apple, raisins, and walnuts. I could taste the welcoming brown sugar in the cookie and the top of the muffin was crunchy and just awesome.
It’s a good thing that I did 10 miles of exercise today.

Tonight my uncle is coming over for dinner, so this gave me an excuse to bake. I decided to make an apple tart because after all, who doesn’t like apple tarts? I pretty much followed Ina Garten’s recipe but instead of making the tart rectangular, I made it square (mostly because I couldn’t roll the dough properly).
I can’t wait to eat it tonight!
I never was a big fan of breakfast sandwiches until last semester when I regularly saw one of my friends fastidiously construct what seemed like a work of art with scrambled eggs, sausage or bacon, and cheese on two English muffins. Once I started making similar but not as perfect breakfast sandwiches, I got hooked.
Now that I am at home, I still crave a sandwich in the morning, but I do not have access to bacon or sausage (we don’t keep these in the house). So I decided to make a sweet sandwich – peanut butter and banana with a little dark chocolate and some cinnamon.
To make this bad boy, I took two slices of whole grain bread, smeared some smooth peanut butter on both sides, put sliced banana (roughly one third of a banana), and sprinkled 10 chocolate chips on top of the banana (Just to clarify, I did not count how many chocolate chips I actually put on). I spread a little smart balance (this is a butter supplement we have in the house, but you can put butter as well) on the outer faces of my sandwich and then sprinkled the bread with cinnamon sugar. I put my sandwich in a frying pan for about 5 minutes until the chocolate chips melted and the banana got nice and soft.

Breakfast is by far the best meal of the day. I had my annual checkup today, and since I got a blood test, I couldn’t eat anything before my appointment. When I got home, slightly tired from not eating (pathetic I know), I immediately entered the kitchen and fried some eggs and made toast. With orange juice, tea, and yogurt with raspberries on the side, I will be satisfied for a few hours, until lunchtime that is.
For dinner, I ate lentil soup and lamb chops. I wanted to try something new, so I sautéed swiss chard with a little garlic, olive oil, and lemon juice. I have to admit that I prefer cooked spinach, as I found the chard a bit too bitter for my taste. Alongside my meat and leafy greens, I had red potatoes with garlic and parsley. Overall, a very good dinner!
Following my one hour trip to the gym, I wanted to eat a healthy lunch, so I decided to have some cold cucumber soup and salad with the leftover chicken from yesterday’s barbecue. I added sliced tomatoes, ribbons of carrots, and balsamic vinaigrette. Lunch took less than 10 minutes to prepare, and to reward my healthy morning, I ate a cider doughnut for dessert. It’s been a while since my last blog post, but now I am on summer break and I plan on eating lots of good food and sharing my experiences with you. For my first meal home, I had cold cucumber soup with fresh dill and arctic char with roasted veggies. Though everything was absolutely delicious, the highlight of my meal was the buckwheat tea my roommate brought me from Korea. I don’t want to say it tasted like wheat because drinking carbs doesn’t sound appealing whatsoever. What I can say is the tea was mildly sweat and so tasty that I even ate the buckwheat grains in my hot water. It was like having cereal and tea at the same time. Mind-blowing, right? I drank my tea with a cider doughnut from Atkins. What a perfect way to start my summer!
